We’ve got to stop the mindset that healthy food is something to suffer through to achieve a goal.  Healthy can and should be delicious.

We love a good superbowl snack as much as the next person.  This year we decided on a 7-layer dip.

Oh, and this was as easy as it was delicious.  It got rave reviews from both family and friends.

A reminder here to read your labels!  There is no reason for us to tolerate all the junk that is put in our foods.

Vote with your dollar at the grocery store.  Purchase the product that only has ingredients that are acceptable to you.

7-Layer Dip

2 cans organic refried beans

2 pints sour cream

Taco Seasoning (please make your own, recipes everywhere including one on this site)

1 container Wholly Guacamole (or make your own if avacados are ripe

1 jar of salsa

4 bell peppers (red, green, orange, whatever) finely diced

1 large or 2 small onions finely diced

1 can of organic black olives, sliced

2 cups of shredded cheese of your choice (reserving a few sprinkles for garnish)

1 head ice berg lettuce, shredded

Dump the beans into a bowl and add a packet worth of taco seasoning, mix together and layer into the bottom of a large service dish.

Dump the sour cream into a bowl and mix in half a packet worth of taco seasoning and layer that on top of the beans, reserving enough to garnish the top.

Add the next ingredients in the order they are listed above, leaving a few sprinkles of peppers to garnish.

Sprinkle the top of the lettuce with the reserved handful of shredded cheese, add the leftover dollop of sour cream on top and sprinkle with the reserved peppers.

Best if made at least a few hours ahead of time.

Simple, simple, simple.  And reasonably healthful.
